Tomato and Cheese Bruschetta

1/4 cup olive oil
3 heaping tbl. chopped garlic
1/3 cup finely diced sweet onion
1 pint cherry tomatoes (diced)
2 tbl. balsamic salad dressing
2 cups shredded mozzarella
1 loaf of French bread or baguetteRecipe
In small bowl, mash olive oil and garlic with a fork. Dice tomatoes and put into another small bowl and add balsamic dressing. Allow to sit to let flavors blend. Slice bread in half lengthwise. Spread garlic and olive oil mixture evenly over both bread halves. Top with diced onion. Place both halves, cut sides up, on cookie sheet and broil until edges just start to get crispy. Watch closely. Remove from oven. Top evenly with tomato/dressing and then with mozzarella cheese. Put back under broiler until cheese melts. Slice diagonally and serve hot.
