Always Perfect Roast Beef

Very unusual directions.... but it makes the most perfect, juicy medium-rare roast beef.... every time!! The secret is NOT opening the oven door!!!
List of Ingredients
Your favorite roast of beef (any size)**
2 small onions
Cooking Spray
Montreal Steak Seasoning
3 cloves of garlic (one cut in half, the others in slices)
** I like to use a 4-5 lb. boneless ribeye roastRecipe
Let roast stand at room temperature for a few hours. Make slits in roast and insert slices of garlic. Rub outside of roast with garlic clove halves. Spray lightly with cooking spray. Season with Montreal Steak Seasoning. Peel and slice onions about 1/4" thick. Place onions under roast in roasting pan. Place roast in COLD oven. Turn oven on to 550 degrees. Leave oven on for 25 minutes (start timing when oven is turned on, NOT when oven temperature is achieved.). Turn oven off. Leave beef in oven for at least one hour or longer. (can be left in oven for several hours.) Do NOT open oven door. Just before serving, turn oven on to 350 degrees for 15 minutes. Remove from oven and allow to sit for 10-15 minutes before carving.
