Pan-Seared Ribeye Steak

Ribeye Steak 1 1/4-1 1/2" thick
Canola oil to coat skillet
Salt & coarse ground black pepper to taste
1 tsp. sugar for each steak
Recipe
Bring steaks to room temperature. Heat cast iron skillet in oven to 500 degrees. Rub steak in oil and apply salt and pepper. Generously add sugar.
When oven reaches 500 degrees, remove skillet and set on a hot burner atop stove. Put steak in pan and heat on top of stove for 30 seconds each side. Put back in oven and cook at 500 degrees for 2 minutes on each side for rare- allow more time according to preference. Remove steak from pan and allow to rest on plate for approximately 2 minutes. Serve whole or slice, then fan slices on plates.
NOTE:
If you like this and plan to use it often:
Mix together about 1 cup salt, 1 cup of pepper and 1/3 cup sugar. This will save you prep time.
