Mango Bread

List of Ingredients
2 1/4 cup flour
2 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking soda
1 tsp. baking powder
1 1/2 cup sugar
1/2 c. oil
3 beaten eggs
1 tsp. vanilla
2 cups mangoes (peeled and diced)
1 1/2 c. chopped walnuts (optional)
Recipe
In large bowl, mix together all dry ingredients. Stir in oil, beaten eggs and vanilla. Stir in mango and chopped nuts (optional). Spread batter into 2 9x5 waxed-paper lined loaf pans. Bake in 325 degree oven for 1 1/4 hours (test after 1 hr.) or until tester inserted in center comes out clean. Remove from pan immediately and peel off waxed paper while still hot. Cool on wire racks. Freezes well.
