Cast Iron Skillet Mexican Omelet

List of Ingredients
12-14 eggs (depending on # of servings)
1 1/2 cup milk
Sauteed red, yellow,or green bell peppers, onions and mushrooms--tender crisp (can be prepared day ahead)
1 small jar mild salsa
2 cups shredded cheddar cheese
Recipe
In large bowl, whisk together eggs and milk. Pour into a greased cast iron skillet**. Bake at 350 for 20 minutes until just set. Remove set eggs from oven. Top with salsa, cooked vegetables and shredded cheese.
Cook 5-7 minutes until cheese melts.
**Can also be bake in 9"x13" glass baking dish. Adjust cooking time accordingly.
