Homemade Cranberry Pear Pancakes

2 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
2 cups buttermilk
1/4 cup butter, melted
2 large eggs, beaten
1 teaspoon vanilla extract
1/3 cup dried cranberries
1 ripe pear, quartered and thinly sliced cross-wise

Directions:
Preheat a nonstick saute pan or griddle.
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon and salt. Make a small well in the center of the bowl. Add the milk, melted butter, eggs, and vanilla. Gently whisk the wet and dry ingredients together, just until well combined, but not lump-free. Gently stir in the cranberries and pears. Let batter sit for a few minutes.
Using a dry measuring cup, pour 1/3-cup batter onto the hot pan for each pancake. Cook until the top of the pancake bubbles. Turn the pancake with a spatula and cook just until the underside is golden brown.
Freeze these pancakes (2 hrs on cookie pan in freezer), then place them in a freezer bag.
To eat frozen pancakes: Microwave each pancake 30 seconds.
