    Crazy Cake

    Recipe Introduction

    Although I'm not sure of the origination of this cake, as far back as I can remember, my mom made this for my brothers and me. I've seen it in many community/church/organization cookbooks, so I know it was not my mother's creation. There's no eggs or butter in this recipe, but I can guarantee you it will be one of the moistest and richest chocolate cakes you'll ever eat!!

    List of Ingredients

    3 cups flour
    2 cups sugar
    1 tsp. salt
    1/2 cup cocoa powder
    2 tsp. baking soda
    2 tbl. vinegar
    2/3 cup oil
    2 tsp. vanilla
    2 cups cold water

    Recipe

    In large bowl, mix together dry ingredients. Add vinegar, oil, vanilla and cold water. Mix with a spoon*** until thoroughly combined. Pour into lightly greased 9x13 pan. Bake at 350 degrees for 35-45 minutes or until toothpick inserted in center comes out clean. Serve in pan.

    *This cake can be halved and baked in 8x8 square pan. Adjust cooking time accordingly.

    **Or in an 11X15X2 pan, use the following measurements:
    5 1/2 cups flour
    4 cups sugar
    2 tsp. salt
    1 cup cocoa powder
    4 tsp. baking soda
    1/4 c. vinegar
    1 1/3 cup oil
    4 tsp. vanilla
    4 cups cold water

    ***Or in a 12X18X2 pan, use the following measurements:
    8 1/2 cups flour
    6 cups sugar
    3 tsp. salt
    1 1/2 cup cocoa powder
    6 tsp. baking soda
    1/3 c. vinegar
    2 cup oil
    6 tsp. vanilla
    6 cups cold water


    ***original recipes says to use a wooden spoon, but I always use my electric mixer with good results.
