    Lemon Whipped Cream Cake

    I can remember my mother making this cake for "special" occasions. Simple,delicious and impressive! I remember, one time she made it for my grandmother's birthday. She cut a beautiful Peace Rose from my grandmother's garden and centered it on top of the cake..... absolutley elegant!(She, also, made her cake from scratch, but I take the easy way and use a mix...)

    List of Ingredients




    1 White Cake Mix (made according to pkg. directions)
    1 pkg. Jello Lemon Pudding and Pie Filling (made according to pkg. directions)
    1 pint Heavy Whipping Cream
    1/4 c. sugar

    Recipe



    Make lemon pudding, according to pkg. directions. Cover surface with plastic wrap to prevent a skin from forming. Refrigerate until completely cooled.

    Prepare cake mix (in tube pan or 2 layer pans), according to pkg. directions. Cool completely. If using tube pan, split into two layers. Cover top of base layer with 1/2 of cooled pudding.

    In chilled bowl, using chilled beaters, beat heavy whipping cream, gradually adding sugar, until stiff peaks form. Gently fold remainder of cooled pudding into whipped cream, until completely combined. Frost sides and top of cake with Lemon Whipped Cream.... and enjoy!!
    Keep refrigerated.
