    This cake was very popular during World War II, when several ingredients, such as eggs and butter, were difficult to come by.

    List of Ingredients




    1 cup seeded raisins
    1 1/4. cup water
    1 cup brown sugar
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    1/2 tsp allspice
    1/2 cup shortening
    2 cups flour
    1 tsp. baking soda
    1 tsp. baking powder
    1/2 tsp. salt

    Recipe



    In sauce pan, add raisins, water, brown sugar, spices and shortening. Boil together for 5 minutes. Cool completely. Meanwhile, sift together flour, baking soda, baking powder and salt. Add dry ingredients to cooled raisin mixture. Mix well. Pour into waxed paper lined loaf pan, or well greased tube pan. Bake at 350 approximately 60 minutes or until toothpick inserted in center comes out clean.
