Equally as good with turkey...can also substitute green beans or peas for broccoli... (with broccoli is best..in my opinion) :)
List of Ingredients
3 lbs. boned cooked chicken (or turkey)(chopped)
1 stick butter
1 med. onion, chopped
2 stalks of celery, chopped
1 8 oz. pkg of Pepperidge Farm Stuffing Mix
2 cans cream of celery soup
1 can cream of mushroom soup
1 cup of chicken broth
4 cups or 2 16 oz. pkg. frozen chopped broccoli, thawed (or peas or green beans)
Recipe
In skillet, melt butter and add onion and celery. Cook until tender. Add to stuffing mix and toss lightly.
In bowl, combine soups and broth. Mix well.
In baking dish:
Layer of chicken, layer of broccoli, layer of sauce, layer of topping. Repeat layers again, ending with topping. Cover with foil. Bake 350 for 45 minutes or until heated through. Remove foil for last 15 minutes.
** Mom's original recipe does not call for cheese...but 1 1/2 c. of pizza blend cheese(cheddar & mozzarella) can also be added to mixed stuffing before topping casserole.
