    Great prep method for recipes requiring cooked chicken. Poaching ensures that chicken will stay moist and tender.

    List of Ingredients




    1 c. chicken broth
    1 c. water
    1 sm. onion, halved
    1 stalk of celery, cut in thirds
    1 1/4 lb. boneless chicken breasts (no more than 3/4" thick)

    Recipe



    Add broth, water, onion & celery to a boil in medium saucepan. Add chicken and simmer, covered, for 8 minutes. Turn heat off and let chicken stand in cooking liquid, covered, until cooked through, about 20 minutes. Remove chicken from broth. Store in fridge if not using immediately.
