    Soft Oatmeal Cookies

    List of Ingredients

    1 1/4 cups flour
    1 tsp baking soda
    2 tsp. cinnamon
    1 cup margarine, softened
    1/4 cup granulated sugar
    3/4 cup firmly packed brown sugar
    1 3.4oz. pkg. instant vanilla pudding
    2 eggs
    3 1/2 cups quick-cooking rolled oats
    1 cup *plumped raisins (optional)

    *Soak raisins for 30 minutes in enough hot water to cover. Drain well and pat dry before adding to batter

    **Chocolate, peanut butter, or butterscotch chips can be substituted for raisins.





    Recipe

    Mix flour, baking soda and cinnamon. Combine margarine, the two sugars, and pudding mix in large mixing bowl. Beat until smooth and creamy. Beat in eggs. Gradually add flour mixture. Stir in oats and raisins. Drop by rounded tablespoonfuls (or form into small balls), onto ungreased baking sheet. Bake at 375 degrees for 10 minutes. Cool on rack. Should be stored in an airtight container.
