    Almost Apple Squares (Zucchini)

    Recipe Introduction

    This is one of the most amazing recipes! I serve it without telling anyone the main ingredient and they refuse to believe me when I tell them that it's seeded zucchini and not apples!!! You'll never be able to tell the difference... I promise!!!

    List of Ingredients

    Base/Topping:
    4 cups flour
    2 cups sugar
    1/2 tsp. cinnamon
    1/2 tsp. salt
    1 1/2 cup cold margarine

    Filling:
    8--10 cups seeded, peeled and cubed zucchini
    1/2 cup lemon juice
    1 cup sugar
    1 tsp. cinnamon
    1/2 tsp. nutmeg

    Recipe

    For base and topping:
    In a bowl, combine flour, sugar, cinnamon and salt. Cut in butter until crumbly. Set aside 3 cups. Pat remaining crumb mixture into bottom of a well-greased 10x15 pan. Bake at 350 degrees for 12 minutes or until lightly golden.

    For filling:
    Pour zucchini cubes in saucepan with lemon juice. Bring to a boil. Reduce heat, cover and cook zucchini until fork tender. Stir in sugar, cinnamon and nutmeg. Cover and simmer for 5 minutes. (Mixture will be thin). Spoon over crust (with juices). Sprinkle with the reserved crumble mixture. Bake at 350 degrees for 40-50 minutes or until golden. Cool and serve.
