    Apple Cream Cheese Mold

    2 pkgs 8oz cream cheese (softened)
    2 envelopes unflavored gelatin
    1 cup half and half
    2/3 cup sugar
    2 tsp lemon juice
    1 tsp. vanilla
    1 cup heavy whipping cream (whipped)
    1/2 cup flaked coconut
    4 cups apples ( red or golden delicious peeled and chopped)
    1 cup seedless grapes halved

    Beat cream cheese in large bowl until fluffy. Combine gelatin and half and half in small sauce pan cook over low heat until gelatin disolves. Add to cream cheese , beat until combined, add sugar, lemon, and vanilla. Fold in whipped cream and remaining ingredients into cream cheese mixture until well combined. Pour into mold or large bowl, cover and refrigerate until set or overnight. Garnish with apples and grapes. The mold is 8 cups.

    (Flaked coconut and/or chopped pecans are optional)
