FRY MIX
6 c. self-rising flour
1 c. finely ground corn flour
1 tsp. salt
2 LBS. shrimp, peeled and deveined (26-30 count or larger)**
3 eggs
1/4 c. water
1/2 c. Texas Pete Hot Sauce
**Can also fry haddock with same coating)

FRY MIX----Mix flour, cornmeal, and salt. Store in an airtight container.
LARGE BATCH FRY MIX--- 5 LBS. self-rising flour, 3 c. cornmeal and 3 tbl salt, Mix well and keep in an airtight container
Lightly sprinkle the shrimp with salt. In a small bowl, mix the eggs, 1/4 c. water and hot sauce. Place the fry mix in a shallow dish. Dip each shrimp in the egg mixture and then into the fry mix. Heat oil in deep fryer to 350 degrees. Place the shrimp in the fryer and cook for 2 minutes. Cook haddock for 4-6 minutes (or until it floats). Drain on paper towels. Sprinkle with salt and serve immediately or keep warm in 200 degree oven for brief time.
