    1/4 cup margarine
    2 tbl. flour
    1/4 tsp. salt
    1/4 tsp. nutmeg
    1/2 tsp. paprika
    1 cup heavy cream
    3 egg yolks (slightly beaten)
    2 cup cooked lobster meat
    2 tbl. sherry

    Recipe



    Melt margarine in top of double boiler, over direct heat. Remove from heat. Stir in flour to make a smooth mixture. Add salt, nutmeg and paprika. Gradually, stir in cream. Stirring constantly, bring to just barely boiling. Reduce heat, and simmer, stirring 3 minutes longer. Stir a little of hot mixture into egg yolks. Pour back into top of double boiler. Add lobster; cook, stirring over hot water, until mixture is thickened and lobster is hot- about 10 minutes. DO NOT BOIL. Stir in sherry. Serve over toast points or puff pastry shells. Makes 4 servings
