List of Ingredients
** Recipe can be halved
8 lamb shanks
1 c. each finely chopped carrots, celery, onions, garlic
Olive Oil for sauteeing
1 c. crushed tomatoes with equal amount of water
Salt & Pepper to taste
1/2 tsp. nutmeg
1/2 tsp. oregano
1 cinnamon stick
2 bay leavesRecipe
Saute vegetables in olive oil and add tomatoes and water. Allow to boil for 30 minutes, then simmer for another 30 minutes. Add 1 tsp. each salt and pepper ( or to taste) and 1/2 tsp. nutmeg and 1/2 tsp. oregano. Also add 1 cinnamon stick and 2 bay leaves.
Wash lamb shanks and place in large roasting pan. Add cooked sauce. Cover with foil and bake at 400 degrees for 3 hours until shanks are fork tender. Serve with orzo pasta.
