    Debbie's Baked Pasta w/Roasted Veggies

    List of Ingredients


    2 bell peppers (red,yellow or green or any combination)
    2 zucchini, cut in 1" cubes
    2 summer squash, cut in 1" cubes
    8 oz. mushrooms, cleaned & halved
    1 onion, sliced in 1" strips
    1/4 c. olive oil
    1 tsp. salt, divided
    1 tsp. black pepper, divided
    1 tbl. dried Italian seasoning
    1 lb. penne (or your choice of macaroni)
    3 c. Classico Spaghetti Sauce w/ sausage
    1 c. grated fontina cheese
    1/2 c. shredded mozzarella
    1 1/2 c. frozen peas, thawed
    1/4 c. grated Parmesan, plus 1/3 c. for topping
    2 tbl. butter, cut into small pieces






    Recipe

    Preheat the oven to 450 degrees F.
    On baking sheet, toss peppers, zucchini, squash, mushrooms, and onions w/olive oil, 1/2 tsp. salt, 1/2 tsp. pepper, & Italian seasoning. Roast until tender, about 15 min.

    Bring salted water to a boil. Cook pasta for about 6 min. Drain.

    Toss pasta w/vegetables, spaghetti sauce, cheeses, peas, 1/2 tsp. salt, and 1/2 tsp. pepper. Gently mix.

    Pour into greased 9"x13" pan. Top w/remaining Parmesan cheese and pieces of butter. Bake 25 min. or until cheese is melted.
