Apple (Zucchini) Pie

Filling:
4 c. zucchini
1 1/2 tsp. cream of tartar
dash of salt
2 Tbl. flour
1 Tbl. lemon juice
dash of nutmeg
1 1/4 c. sugar
2 tsp. cinnamon
1 tsp. butter
1 9" unbaked pie shell
Topping For Pie
1 stick margarine
1/2 c. sugar
1 c. flour
Recipe
Peel zucchini, cut lengthwise & scoop out seeds. Slice like apple slices. Simmer 10 minutes in small amount of water, drain well. In mixing bowl, mix cream of tartar, salt, flour, juice, nutmeg, sugar & cinnamon. Add zucchini and mix. Pour into pie shell and dot with butter.
Topping----With pastry blender or two knives, cut margarine into flour and salt, until pea-sized and crumble over top of pie. Bake at 375º for 45 minutes.
