My mother-in-law taught me to make this stuffing almost 40 years ago. Over the years, I have tweaked it and made it my own. She always boiled the potatoes in their skins, peeled them and mashed them. I opted for the easy way out and use instant! When the holidays roll around I am always asked to bring the dressing!!! This recipe makes a very large amount and can easily be halved.
List of Ingredients
2 sticks margarine
2 lg. or 3 med. oniions, chopped
1 16 oz. bag Pepperidge Farm Herb Seasoned Stuffing Mix
6 c. instant potato flakes
2 tsp. Bell's Seasoning
1 1/2 tsp. salt
10 c. boiling water, divided
1 10 oz. can cream of chicken soup
**1 lb. sage sausage meat, browned and drained (optional)
Recipe
Melt margarine and saute onions unti translucent and very tender. In very large bowl, combine stuffing mix,instant potatoes, Bell's Seasoning and salt well. Add cooked onion/margarine mixture to stuffing/potato flake mixture and combine well. In large measuring cup, measure 1 c. boiling water, and add cream of chicken soup. Mix well and add to stuffing mix. Add remaining 9 c. of boiling water and mix well. Season with salt if necessary. Bake in 350 degree oven during the last hour of the turkey's cook time. Can be made ahead and refrigerated, but will require additional cooking time.
**Add cooked and drained sausage meat, if desired, at the same time as adding cooked onions.
