    List of Ingredients




    Salad:
    1/2 cup sliced almonds
    3 tbl. sugar
    1/2 head iceberg lettuce
    1/2 head romaine lettuce
    1 cup thinly sliced celery
    3-4 scallions, chopped
    2-11oz. cans mandarine oranges (drained)

    Dressing:
    1/4 cup vegetable oil
    2 tbl. balsamic vinegar
    1/2 tsp. salt
    1 Tbl. chopped fresh parsley
    2 tbl. sugar (Splenda)
    dash black pepper

    Recipe



    Dressing:
    Combine all dressing ingredients in a jar and shake vigorously.

    Salad:
    In small pan, over medium heat, cook almonds and sugar to carmelize. Stir constantly until sugar is melted and lamonds are coated. This browns very quickly, so be careful. Cool and break apart. Store in air-tight container and sprinkle on salad just before serving. Mix torn lettuces, celery and scallions. Toss. Just before serving, add oranges and almonds. Toss with salad dressing.
