    The secret to this is using a good (large)Italian sub roll, nice and crusty on the outside and soft on the inside! This makes a very large and very hearty sandwich...(as much as I love it, I can only eat half!!)

    List of Ingredients




    4 sweet Italian sausages
    3 tbl. olive oil, divided
    3 potatoes, peeled, diced 1/2" cubes
    1 green pepper, sliced
    1 small onion, peeled and sliced
    1 small can mushroom stems and pieces, drained
    1/2 c. spaghetti sauce
    salt and pepper to taste
    Parmesan cheese, optional
    2 large sub rolls

    Cook sausage, in 1 tbl.olive oil, until no longer pink. Drain on paper towel and slice, lengthwise, but do not cut all the way through. Open sausages so that they lay flat inside the cut sub roll (2 sausages per roll). Cook potatoes in salted water until fork tender, drain. In large skillet, heat remaining 2 tbl. olive oil and saute peppers and onions until tender. Add potatoes and mushrooms and heat through. Pour spaghetti sauce over veggies in skillet,mix well, and continue cooking until heated through. Top sausages with vegetable mixture. Sprinkle with salt, pepper and parmesan cheese.
