    List of Ingredients




    2 tbl. vegetable oil
    2 lb. stew beef,well trimmed,cut in 1 1/2" cubes
    1 med. onion,finely diced in food chopper
    2 stalks celery, finely diced in food chopper
    2 cups beef broth
    6 potatoes, peeled and cubed
    1 bag baby carrots
    Salt and pepper to taste
    2- 14 1/2 oz. cans beef gravy (I use Campbell's)

    Heat oil in lg. skillet. Brown it in small batches. Set aside. Cook the onion & celery, until it is caramelized. Deglaze the skillet with broth, scraping up all the browned bits on the bottom. Place potatoes and carrots in crockpot. Top with meat. Season with salt and pepper. Pour broth mixture over meat. Cover. Cook on Low setting for 10-12 hrs, or on High 4-6 hrs. Add 2 cans beef gravy and continue to heat just until thickened. Serves 6.
