Verrrrry thick and creamy!! Great served with Garlic & Cheese biscuits on a chilly winter night!!
List of Ingredients
2-3 tbl. bacon fat
1 med. onion, finely minced*
1 lg. stalk of celery, finely minced*
3/4 cup butter
3/4 c. flour
6 cans minced or chopped clams
1 quart half-and-half
2 15 oz. cans diced potatoes** (well drained)
salt & pepper to taste
2-3 strips cooked and chopped bacon(optional)
*I use a mini chopper and puree them.
** I always used raw potatoes when making chowder but was constantly disappointed by the texture they created.... haven't been disappointed once since switching to canned diced potatoes!
Recipe
In a large, heavy saucepan, heat bacon fat over medium heat until melted. Add pureed onion and celery, stirring frequently. Cook until tender but not browned. Add butter and allow to melt completely. Whisk in flour, stirring constantly, until smooth. (this will be extremely thick and requires constant whisking.)Slowly, whisk in drained clam juice from all 6 cans, whisking constantly until thick and smooth. Slowly, add half-and-half, whisking constantly. Heat through, until mixture ALMOST comes to a boil, but DO NOT BOIL!!
Stir in drained clams and drained potatoes just before serving and heat through. Season with salt and pepper. Add chopped bacon, if desired.
