Sooo tasty on a cold winter night!
List of Ingredients
1 lb. mild Italian Sausage meat (uncased)
8 Sweet Italian Sausages
4-8 Hot Italain Sausages (optional)
1 10 oz. box fz. spinach or 1 lb. fresh spinach
2 14 oz. cans diced tomatoes
1 lg. carton of low sodium chicken broth
3 tbl. olive oil
1 tsp each: Garlic powder (or 2 oz fresh, minced garlic, onion powder, dried minced onion, celery seed, oregano, parsley, Italian seasoning, black pepper
1 or 2 bags Success Rice, cooked according to pkg. directions

Heat lg. pot. Saute 2 tbl. olive oil and seasonings. Brown and separate 1 lb. uncased Italian sausage in pot. When done remove from pot (if using a crockpot put in there).
Add 1 tbl. olive oil to pot, brown remaining sausages and cut into 1" pieces.. Add tomatoes when sausage is browned. Add 1/2 c. water from each tomato can. Add broth (to taste add 1-2 beef or chicken cubes, optional). Add in already cooked sausage meat and seasonings. Simmer for 2-3 hours. Add spinach, simmer 1 more hour. Cook rice and serve soup over rice. Top hot soup with shredded mozzarella. Serve with crusty bread.
