    Deep Fried Turkey

    For 14 lb. turkey

    Before you fill the fryer pot with oil, put the turkey in and fill with water to get an accurate measurement for your oil. Remove turkey and pat completely dry inside and out. Dump the water, wash pot and wipe fryer --completely-- dry.

    Fill fryer pot to premeasured level with peanut oil (or 1/2 peanut & 1/2 canola oil) and heat the oil to between 350-360°. Place turkey in the basket, insert and slowly lower it into the hot oil. A whole turkey will take 3 min. per pound to cook. It is done when the internal temperature reaches 170° on an instant read meat thermometer.

    Slowly lift the basket out of the hot oil. This can be done by inserting a broomstick through the handle and having two people lift the basket out of the pot. Turn turkey out onto a paper bag lined jelly roll pan and let sit for about 15-20 min. before carving.
