    Spread- Caramelized Onion Spread

    1 tablespoon olive oil
    2 cups chopped yellow onions
    1 teaspoon dried rosemary, crushed
    2 tablespoons dried currants or chopped dark or golden raisins
    2 tablespoons pine nuts, toasted (optional)
    1 1/2 teaspoons balsamic or red wine vinegar
    Salt and ground black pepper, to taste
    1/2 cup crumbled feta, goat or blue cheese
    1/2 cup cream cheese
    36 Keebler® Toasteds® Buttercrisp, Sesame, Wheat or Reduced-Fat Wheat Crackers



    Recipe

    Heat oil in medium skillet over medium-low heat in non-stick pan. Add onions and rosemary. Cook, stirring frequently, until soft and golden, about 20 to 25 minutes (Reduce heat to low if onion browns too quickly). Stir in currants, vinegar, salt and pepper. Let cool. Stir together feta, cream cheese and onion mixture. Place in serving bowl and top with pine nuts. Makes 36 appetizers (3/4 cup spread). To store, cover and refrigerate for up to 4 days.
