Balls- Chicken Ball Appetizers

List of Ingredients
1 lb ground chicken 500 g
2 egg whites (whisked) 2
1/4 cup water 50 mL
1/2 cup plain bread crumbs 125mL
2 tbsp grated parmesan cheese 25 mL
1 tbsp dried parsley 15 mL
2 tsp basil 10 mL
1 tsp tarragon 5 mL
1 clove garlic (chopped) 1
pepper to taste
cooking spray
Recipe
-Thoroughly blend all ingredients.
-Shape into small balls about 1 inch in diameter.
-Line a baking sheet with foil and spray lightly with cooking spray.
-Preheat oven to 325 F.
-Form balls and line up on sheet so that they are close but not touching.
-Bake in oven for 20 minutes or until juices run clear.
-Serve on cocktail picks with a dipping sauce or refrigerate for up to 2 days.
-Appetizers may be reheated in a non-stick skillet, in the microwave or in a hot oven.
Makes 45 1-inch balls.
