Quiche- Chile Con Queso Mini Quiches

1/2 cup chopped tomato
1/4 cup minced green onions
1 clove garlic, minced
4 eggs, beaten
1/2 cup (2 Oz.) shredded Cheddar
1/2 cup (2 Oz.) Monterey Jack Cheese With Jalapeno Pepper
1 teaspoons Chili Powder
1/2 teaspoon ground Cumin
1/8 teaspoon cayenne
1 cn (4 Oz.) chopped green chiles, rinsed & drained
Whole green chiles, sliced
Recipe
1. Coat a nonstick skillet with a cooking spray; place over medium high heat until hot.
2.Add tomato, green onion, and garlic.
3.Saute until onions are tender.
4.Combine tomato mixture, eggs, cheeses, chili powder, cumin, cayenn and chopped green chiles. Stir well.
5.Spoon 1 tablespoon of mixture into miniature muffin pans which have been coated with cooking spray.
6.Bake at 425 degrees for 8 to 10 minutes or until centers are set.
7.Remove from oven; allow to cool in pan 1 minute, loosen edges with a knife and remove from pan. Serve warm. Garnish with slice green chiles, if desired.
