Fried- Spicy Shrimp Fritters 2

5 teaspoon olive oil, divided use
1 pound medim shelled and deveined shrimp
2 teaspoons minced garlic
1/2 of a jalapeno chile with seeds, finely chopped
3/4 teaspoon salt, divided
2 large eggs, lightly beaten with 2 tablespoons water
1/4 cup all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon freshly ground pepper
Recipe
1. Heat 1 teaspoon of the oil in a 12-inch nonstick skillet over high heat 2 minutes. Combine shrimp with garlic, jalapeno and 1/2 teaspoon of the salt on waxed paper, tossing to coat. Add shrimp to skillet and cook, stirring, 1 to 2 minutes, until partially cooked. Cool and chop.
2. Meanwhile, whisk eggs with water in medium bowl 10 seconds, until very frothy; stir in shrimp and any juices from skillet.
3. Combine flour, baking powder, remaining 1/4 teaspoon salt and pepper in a small bowl. Sift half of the flour mixture over the shrimp, then gently fold in with a rubber spatula. Repeat with remaining flour mixture.
4. Wipe skillet with paper towel. Add 1 teaspoon of the oil and heat over medium-high heat. Drop 12 level tablespoons of the shrimp mixture into skillet, spacing evenly. Cook 1 to 1 1/2 minutes until golden; turn fritters. Drizzle another 1 teaspoon of the oil into skillet and cook 1 to 1 1/2 minutes more until golden. Transfer to a serving platter. Repeat with remaining batter and 2 teaspoon oil. (Can be made ahead. Transfer fritter to a cookie sheet and cool. Cover and refrigerate overnight. To reheat, bake in a 350 degree oven 10 minutes.
5. Serve with warmed jalapeno jelly or other spicy sauce.
Makes 24 fritters.
