    Fried- Ground Turkey Pot Stickers

    List of Ingredients

    3/4 pound ground turkey
    1 cup finely minced cabbage
    2 tablespoons minced fresh ginger
    1 tablespoon minced garlic
    6 green onions, white and green parts separated, both finely minced
    1/2 cup plus 2 tablespoons soy sauce, divided use
    48 dumpling wrappers; see cook's notes
    1 egg, lightly beaten
    Peanut or vegetable oil
    1/4 cup rice or white vinegar

    Cook's notes: Dumpling wrappers are often labeled gyoza wrappers (Japanese name for pot stickers). They are round, about 2 inches across. Many supermarkets sell them; look in the refrigerated deli.


    Recipe

    Combine turkey, cabbage, ginger, garlic, white parts of green onions and 2 tablespoons soy sauce in bowl with 1/4 cup water. Lay wrapper on clean, dry surface and, using finger or brush, spread a bit of egg along half of circumference. Place a rounded teaspoon or so of filling in center of wrapper, fold over and seal by pinching edges together. Lay each dumpling on plate until you're ready to cook. If you want to wait a few hours, keep plate covered with plastic wrap and refrigerate until mealtime, or freeze for a few days.

    To cook, pour about 2 tablespoons oil into large nonstick skillet, turn heat to medium-high and heat for 1 minute. Add dumplings, 1 at a time, to oil. They can touch, but should sit flat in 1 layer. Cook about 2 minutes, or until bottoms of dumplings are lightly browned. Add 1/4 cup water per dozen dumplings to skillet (in other words, if you're cooking 2 dozen dumplings at a time, add 1/2 cup water and cover; lower heat to medium and cook 3 minutes.

    Meanwhile, make dipping sauce with 1/2 cup soy sauce, green parts of green onions and vinegar; stir.

    After 3 minutes, uncover dumplings; raise heat again and cook 1/2 minute, until bottoms are dark brown and crisp (and water has evaporated). Use another 2 tablespoons oil to repeat process if necessary. Serve hot with dipping sauce.

    Makes about 48 pot stickers (4 main-course servings, or about 8 appetizer servings).

    Per pot sticker: 36 calories (27 percent from fat), 1.1 g fat (0.2 g saturated, 0.3 g monounsaturated), 10.7 mg cholesterol, 2.3 g protein, 4.2 g carbohydrates, 0.1 g fiber, 283 mg sodium.
