Fried- Spicy Shrimp Fritters

Makes 40
1 cup water
1 pinch salt
3 ounces butter
1/4 cup Zaterain's seasoning
1 cup bread flour or enough flour to pull away from sides of pan
4 eggs
1 cup diced cooked shrimp
1/4 cup sliced chives
Vegetable oil for frying
Recipe
Heat oil to 350 degrees. Bring water, butter and seasonings to boil. Add flour until it pulls away from side of pan. Use a wooden spoon and stir constantly 2 minutes. Remove from heat and stir 1 more minute. Stir one egg at a time into flour mixture. Stir each egg until fully incorporated before adding the next egg. After all eggs are incorporated, fold shrimp and chives into mixture.
Drop by tablespoons into hot oil, being careful not to crowd. Fry until golden brown on all sides.
