Hush Puppies with Corn
List of Ingredients
1 cup all-purpose flour
1 cup cornmeal
2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup cream-style corn
1/2 cup chopped onion
1 egg, beaten
2 tablespoons vegetable oil
Vegetable oil
Recipe
Combine first 4 ingredients in a large mixing bowl. Add corn, onion, egg, and 2 tablespoons oil; stir well.
Carefully drop batter by level tablespoonfuls into deep hot oil (370 degrees F); cook only a few at a time, turning once. Fry 3 to 5 minutes until hush puppies are golden brown. Drain well on paper towels. Yield about 2 1/2 dozen. From Southern Living 1983
