    Makes 6 servings



    Vegetable oil for deep frying

    2 cups cornmeal

    1 egg, beaten

    1 cup water

    3/4 cup powdered dry milk

    1/4 cup sugar

    1 teaspoon kosher salt

    Recipe



    In a deep saucepan, pour enough vegetable oil to come 2 to 3 inches up the sides; heat to 365 degrees.

    In a mixing bowl, combine cornmeal, egg, water, milk, sugar and salt with a whisk until just blended. Working in batches, drop batter into oil a tablespoon at a time, taking care not to overcrowd the pan. Fry hush puppies until cooked through and golden brown, 2 to 3 minutes per batch.

    Remove from the oil and drain on paper towels. Let oil return to 365 degrees before frying another batch.
