    Corn- Menfolk's Cornbread

    List of Ingredients

    2 1/4 cups yellow cornbread mix
    3 tablespoons sugar
    1/2 cup vegetable oil
    3 eggs, beaten
    1 (8 1/2-ounce) can cream style corn
    1 1/2 cups (6 ounces) shredded Longhorn cheese
    1 large onion, grated
    2 large canned jalapeno pepper, seeded and chopped

    Recipe

    Combine all ingredients, mixing well. Heat a well-greased 13- x 9- x 2-inch baking pan in 400 degree oven for 3 minutes or until very hot.
    Pour batter into hot pan, and bake at 450 degrees for 20 minutes or until cornbread is golden brown. Cut bread into 2-inch squares to serve. Yield: about 2 dozen
