Quick- Banana Carrot Bread

1 cup mashed bananas (3)
1 cup white sugar
3/4 cup canola oil
2 eggs (beaten)
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 cup grated raw carrot
1/2 cup chopped nuts
Recipe
Combine banana, sugar, oil and eggs in large bowl. Beat with an electric mixer for two minuts or 300 strokes by hand. Sift together flour, soda, salt and cinnamon. Fold into banana mixture. Stir in carrots and nuts. Spoon into a greased and floured 9 x 5 x 2 3/4-inch loaf pan. Bake in a 350 degree oven 55 to 60 minutes. Cool in pan 10 minutes. Remove from pan and cool on rack. Wrap and store overnight before cutting. Makes 1 loaf.
