Overnight Brunch Casserole
List of Ingredients
1 package (28 ounces) frozen potatoes O’Brien
8 ounces (2 cups) shredded colby-jack cheese (divided)
8 eggs
2 cups milk
1/4 cup flour
2 teaspoons seasoned salt
1/2 teaspoon ground black pepper
Recipe
Arrange potatoes in greased 9 x 13-inch glass baking dish. Top with 1 cup of the cheese. In medium bowl, whisk eggs with milk. Whisk in flour and seasonings. Pour over potatoes. Cover and refrigerate overnight. Uncover and bake in 350°F. oven for 30 minutes. Top with remaining cheese. Bake for 10 to 15 minutes or until golden brown and set. Let stand 5 minutes before serving.
