Cheesecake- Amaretto Cheesecake
List of Ingredients
Crust:
1 cup blanched slivered almonds, lightly toasted
1/3 cup sugar
1 1/2 cups chocolate wafer crumbs
6 tablespoons butter, softened
Filling:
1 1/2 pounds cream cheese, softened
1 cup sugar
4 large eggs
1/3 cup heavy cream
1/4 cup Amaretto or other almond-flavored liqueur
1 teaspoon vanilla
Topping:
2 cups sour cream
1 tablespoon sugar
1 teaspoon vanilla
1/3 cup blanced slivered almonds. lightly toasted, for garnish
Recipe
Crust:
Finely chop the almonds and combine with the sugar, chocolate crumbs, and butter. Pat the mixture into the bottom and sides of a 9-inch springform pan and chill for 30 minutes.
Filling:
Preheat the oven to 375 degrees F. In a large bowl, blend the cream cheese and sugar. Add the eggs one at a time, beating well after each addition. Add the cream, Amaretto, and vanilla and beat until the mixture is light. Pour the batter in prepared chocolate crumb crust and bake the cake in the middle of the oven for 30 minutes. Transfer the cake to a rack and let stand for 5 minutes. (The cake will not be set.)
Topping:
Combine the sour cream, sugar, and vanilla. Spread evenly over the cake and bake 5 minutes longer. Transfer the cake to a rack and cool completely. Chill cheesecake, lightly covered, overnight. To serve, remove the sides of the pan and press the almonds around the top edge of the cake.
