Cake- Apple & Spice Cake Roll

1 cup all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
4 large egss, separated
4 tablespoon margarine or butter (1/2 stick), softened
sugar
1/2 cup apple butter
2 medium-sized McIntosh apples (about 3/4 pound)
confectioners' sugar
1 cup heavy or whipping cream
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1 teaspoon gRecipe
About 2 hours before serving or early in the day
1. Grease 15 1/2 by 10 1/2 jelly-roll pan; with waxed paper; set aside. In small bowl, mix flour , baking powder, and salt. In another small bowl, with mixer at high speed; beat egg whites until stiff peaks form.
2. Preheat oven to 400 F. In large bowl, with same beaters, beat egg yolks, margarine or butter, and 1/4 cup sugar until thick and lemon-colored, about 5 minutes; beat in apple butter until blended. Gently fold flour mixture and beaten whites into egg-yolk mixture. Spread batter evenly in pan. Bake cake 15 minutes or until golden and top springs back when lightly touched with finger.
3. While cake is baking, peel and core apples; coarsely chop. In 3-quart saucepan over medium heat, cook apples, stirring occasionally, until very soft but not mushy. Place in small bowl, cover and refrigerate until chilled.
4. Sprinkle clean cloth towel with confectioners' sugar. When cake is done, immediately invert cake onto towel. Carefully peel waxed paper from cake. If you like, cut off crisp edges. Starting at a narrow end, roll cake with towel, jelly-roll fashion. Cook cake completely, seam side down, on a wire rack, about 1 hour.
5. When cake is cool, in small bowl, with mixer at medium speed, beat heavy or whipping cream, cinnamon, vanilla extract, giner, cloves and 2 tablespoons sugar until still peak form. Fold cooked apples into whipped-cream mixture. Unroll cake and spread with whipped-cream mixture. Starting from same narrow end, roll cake without towel. Place roll, seam-side down, on platter; sprinkle with confectioners' sugar. Makes 12 servings.
