Recipe Introduction
This dense pie makes the perfect care package for the college student in your life.
If using a disposable pie plate, for added support while moving it in and out of the oven, set the foil pie plate in a metal or glass pie plate, or place it on a baking sheet.
List of Ingredients
(8 servings)
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1/2 cup creamy peanut butter
2 large eggs
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
1 1/2 cups (9 ounces) semisweet chocolate chips
9-inch pie crust, unbaked
Preheat the oven to 400 degrees.
Recipe
In a large bowl with an electric mixer on low speed, beat the granulated and brown sugars together with the peanut butter until blended and the mixture forms crumbs. Add the eggs and vanilla and mix until smooth. Slowly add the flour, mixing just until incorporated. Using a spoon, stir in the chocolate chips. Scrape the batter into the pie crust.
Bake the pie in the preheated oven for 10 minutes. Reduce the temperature to 350 degrees and bake until the top is firm and the filling is set, about 30 more minutes. Transfer the pie plate to a wire rack to cool completely.
Serve at room temperature.
