List of Ingredients
SERVES FOUR TO SIX
2 tablespoons olive oil
1 cup chopped onion
2 cloves garlic, minced
1 pound lean ground beef
1 can (28 ounces) crushed tomatoes
1 package taco seasoning
1 can (4 ounces) diced green chilies
1 can (4 ounces) chopped black olives
1 large sack (15 ounces) cheese-flavored tortilla chips
1/2 pound mozzarella cheese, grated
1 pint light sour cream
1 cup shredded Cheddar cheese
Recipe
Heat the oil in a large skillet. Add the onions and stir-cook 3 minutes. Add the ground beef and bust it up with a wooden spoon. Toss in the minced garlic and cook everything until the beef is browned.
Stir in the tomatoes, taco seasoning, green chilies and olives. Simmer this mess for 10 minutes.
Oil an oven dish about 10 inches by 15 inches. Use half the tortilla chips, slightly crushed, to line the bottom of the pan. Top with the tomato sauce. Add a layer of mozzarella and cover with the sour cream. Top with the rest of the tortilla chips, also crushed lightly.
Shove the dish into a 350-degree oven and cook uncovered for 30 minutes. Remove from the oven, scatter the Cheddar over the top, and return to oven until it is melted.
Remove platter from the oven and let the casserole ingredients sit 5 minutes before dishing it up.
