Smoked Salmon Hash

List of Ingredients
SERVES FOUR
3 medium Yukon Gold potatoes, scrubbed but not peeled, cut into small dice
2 tablespoons butter
1 medium red onion, peeled and cut into small dice
2 tablespoons capers
1 preserved lemon, julienned
2 Roma tomatoes, seeded and diced
4 tablespoons finely chopped chives
2 ounces smoked salmon
Salt and pepper to taste
Recipe
Saute potatoes in butter until golden brown. Add onions and cook until softened.
Add the capers, lemon, tomato, chives and smoked salmon. Toss to heat through.
Serve as is or top with poached or fried eggs.
