Bar- Cherry Almond Nanaimo Bars
List of Ingredients
Makes about 9 bars.
Bottom layer:
1/2 cup butter
1/3 cup cocoa
1/4 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 3/4 cup graham cracker crumbs
1 cup dried coconut
1/2 cup chopped almonds, toasted
Filling:
2 cups sifted confectioners' sugar
1/4 cup butter, softened
2 tablespoons maraschino cherry juice
1/4 teaspoon almond extract
1/3 cup chopped maraschino cherries
Glaze:
4 ounces semisweet chocolate
2 tablespoons butter
Recipe
To make bottom layer: In heavy saucepan over low heat, cook butter, sugar and egg for 5 minutes, or until thick and smooth, stirring constantly. Remove from heat. Stir in vanilla. Add cracker crumbs, coconut and almonds. Pat firmly and evenly into greased 9-inch square pan. Refrigerate for 1 hour, or until firm.
To make filling: In bowl, using electric mixer, beat together confectioners' sugar, butter, cherry juice and almond extract until smooth. Stir in cherries. Spread over bottom layer. Cover. Refrigerate for 1 hour, or until firm.
To make glaze: In top of double boiler over hot (not boiling) water, melt chocolate and butter, stirring until smooth. Spread over filling. Cover. Refrigerate for 1 hour, or until set. Bars can be refrigerated for up to 2 weeks or, if well wrapped, frozen several months
