    Bar- Mauna Loa Macadamia Nut Rum

    List of Ingredients





    CRUST:

    ½ cup butter, room temperature
    ¼ cup sugar
    1 cup flour

    FILLING:

    2 eggs, slightly beaten
    1 ¼ cups brown sugar, packed
    2 tablespoons flour
    ½ teaspoon salt
    ¼ teaspoon baking powder
    1 cup flaked coconut
    1 cup chopped macadamia nuts
    1 teaspoon vanilla
    1 tablespoon Jamaican rum

    FROSTING:

    2 tablespoons butter, room temperature
    1 ¼ cups powdered sugar, sift before measuring
    1 tablespoon milk
    ½ teaspoon vanilla
    1 teaspoon rum

    Recipe



    For the crust: Mix butter, sugar and flour together at medium speed until thoroughly blended. Press mixture evenly over bottom of 9-by-13-inch cake pan. Bake at 350 degrees for 15 to 20 minutes until just beginning to brown. Remove from oven and pour filling over, spreading evenly.

    For the filling: Mix together eggs, brown sugar, flour, salt, baking powder, coconut, nuts, vanilla and rum until well blended; spread over crust. Bake 15 to 20 minutes at 350 degrees until firm and golden brown.

    For the frosting: Beat together the butter, powdered sugar, milk, vanilla and rum until smooth. Add a little more milk and/or rum if necessary to make a good spreading consistency. Spread over cooled bars. May be cut into 32 or 48 bars.
