    5 ounces semisweet chocolate, chopped

    3 tablespoons water

    1 teaspoon instant coffee powder or freeze-dried coffee granules

    1/2 cup plus 2 tablespoons (5 ounces) unsalted butter, cut into pieces, room temperature

    4 large eggs, separated

    1/2 cup plus 2 tablespoons sugar

    1/4 teaspoon cream of tartar

    5 tablespoons flour, sifted

    Quick Coffee Sauce, optional (recipe given)

    Lightly butter an 8-inch-square baking pan. Line with parchment paper or wax paper. Butter paper and dust with flour, shaking out excess.

    Melt chocolate with water and coffee powder in small bowl set over nearly simmering water. Stir until smooth. Add butter and stir until blended. Remove from pan of water and let cool.

    Beat egg yolks in large bowl. Beat in 1/2 cup sugar. Whip mixture at high speed of electric mixer 5 minutes or until pale and very thick. In separate large dry bowl using clean beaters, beat egg whites with cream of tartar until soft peaks form. Gradually beat in remaining 2 tablespoons sugar. Whip at high speed until whites are stiff and shiny but not dry. Gently stir chocolate mixture into yolk mixture with wooden spoon. Sift flour over chocolate mixture and fold in gently with a spatula. Gently fold in whites in 3 batches. Transfer batter to prepared pan.

    Bake at 325 degrees 40 minutes or until a toothpick inserted in the center comes out clean. Cool cake in pan on rack until lukewarm. Cake will settle slightly in center. Cut cake into squares while in pan. Serve lukewarm or at room temperature with sauce, if using. Makes 8 to 9 servings.
