Bar- Peach Oatmeal Bars

Base
1 1/4 cups sugar
1 cup butter flavor shortening
2 eggs
1/4 cup light corn syrup
1 tablespoon vanilla
3 cups AP flour
1 teaspoon ground ginger
3/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
Topping
1 can (16 ounces) sliced peaches, drained and coarsely chopped
1 cup peach preserves or jam, stirred
1 1/4 cups oatmeal
1/2 cup coarsely chopped pecans
Recipe
Heat oven to 350 degrees. Grease 9 x 13-inch pan with shortening. Place a cooking rack on counterop for cooling cookies
For base: combine sugar and shortening in large bowl. Beat at medium speed of electric mixer until well blended. Add eggs, syrup and vanilla. Beat until well blended and fluffy. Combine flour, ginger, baking powder, cinnamon, baking soda and salt. Add gradually to creamed mixture at low speed. Mix until just blended. Divide dough into thirds. Spread 2/3 dough into bottom of prepared pan using long metal spatula. Set aside remaining 1/3 dough.
For topping: stir peaches and peach preserves until blended. Combine oatmeal and pecans with reserved dough. Set aside.
Spread peach mixture evenly over base. Crumble reserved topping mixture over peaches. Press mixture gently into peaches. Bake 30 to 35 munutes. Do Not Overbake. Place pan on cooling rack. Cool 10 minutes in pan, Cut into bars. Makes 32 bars.
