    List of Ingredients




    1 cup all-purpose flour
    1/2 cup butter or margarine, softened
    1/4 confectioner's sugar
    2 eggs
    1 cup granulated sugar
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    2 teaspoons lemon peel, if desired
    2 tablespoons lemon juice
    1/2 cup flaked coconut

    Heat oven to 350 degrees. Mix thoroughly flour, butter, and confectioner's sugar. Press evenly in an ungreased bakig pan, 8 x 8 x 2-inches, building up a 1/2-inch edge. Bake 20 minutes.
    Beat remaining ingredients except the coconut until light and fluffy, about 3 minutes. Stir in coconut and spread the mixture on the hot crust. Bake abut 25 minutes longer, just until no impression remains when touched lightly in the center. Cool and cut into squares. 25 squares.
