Drop- Orange Marmalade Cookies
List of Ingredients
1/2 cup butter
1 cup sugar
2 eggs, well beaten
3 cups sifted flour
1/2 tsp. baking soda
1/2 tsp. salt
1 cup thick orange marmalade
Recipe
1. Cream butter. Add sugar and continue beating until light and fluffy.
2. Mix in eggs. Beat in flour, soda and salt.
3. Add marmalade and blend.
4. Drop by teaspoonfuls 1 inch apart on a well-buttered cookie sheet. Bake at 350 degrees for 10 to 12 minutes. Remove and cool.
5. Cover with Orange Icing.
Makes about 3 dozen cookies.
ORANGE ICING
1/4 cup orange juice
1 tsp. lemon juice
2 tsps. grated orange peel
1 tsp. grated lemon peel
3 tbls. soft butter
3 cups confectioners' sugar
1/8 tsp. salt
1. Mix juices and peels. Cream butter and sugar. Mix the two together and blend until smooth.
2. Add in salt and mix until spreading consistency.
