Shaped- Pistachio Drumsticks

1 c. shelled pistachios (from about 10 oz. unshelled)
1/3 c. sugar, divided
1 c. (2 sticks) cold butter, cut into small pieces
1/2 tsp. vanilla extract
2 1/4 c. flour
Pinch salt
Powdered sugar for garnish
Recipe
Preheat oven to 350 degrees. Spread pistachios on an ungreased baking sheet and bake for 5 to 7 minutes, stirring often to prevent burning. Remove and cool. In a food processor, grind pistachios and half the sugar to a fine powder. Add remaining sugar, butter and vanilla, and process to a paste.
Sift flour and salt together and add to paste in processor, about a third at a time, and mix until dough forms. Refrigerate for 30 minutes. Roll out into 1/2-inch-thick logs and cut into 3-inch lengths. Bake on a parchment paper-covered baking sheet for 15 minutes. Decorate with sifted powdered sugar, remove to a rack and cool.
