Rolled Out- Spice Cookies (Minnesota)
List of Ingredients
1/2 cup butter
3/4 cup granulated sugar
1 egg
3/4 cup unsulphured molasses
2 teaspoon grated orange rind
3 1/2 cups flour
1/2 teaspoon soda
1/2 teaspoon salt
1 1/2 teaspoons ginger
1 1/2 teaspoons cinncamon
1 teaspoon ground cloves
1/4 teaspoon ground cardamom
Ornamental frosting
2 egg whites, lightly beaten*
2 1/2 cups confectioners' sugar
1/2 teaspoon vanilla
Recipe
1. To prepare cookies, cream the butter
and granulated sugar together well.
Beat in the egg and then the molasses
and orange rind.
2. Sift together the remaining cookie
ingredients and gradually stir into the
creamed mixture.
3. Mix the ingredients to form a dough.
Wrap in wax paper and chill in the
refrigerator at least four hours or
overnight.
4. Preheat the oven to 375 degrees.
5. Roll out the dough to
one-quarter-inch to one-eighth-inch
thickness. Cut out shapes with floured
cutters and place cookies on greased
baking sheets. (If desired, the cookies
may be decorated at this point with
sprinkles, raisins, cinnamon candies
and silver dragees. Make a small hole
in one end of the cookie if it is to be
hung on the Christmas tree.)
6. Bake about ten minutes. Cool on a
rack.
7. To prepare frosting, combine all the
ingredients. If desired, mixture may be
thickened with additional
confectioners' sugar or thinned with
extra egg white.
8. Use mixture to frost cooled cookies.
A parchment cone bag or a decorating
set can be used.
Yield: About six dozen.
*you might want to use an egg white
substitute such as Just Whites
